    - with added protein (even for higher brine content)

    Brined meat products cooked in a form or casing:
    - In steam permeable casing
    - In artificial casings (hams, luncheon meat)
  • MARINADES:                               
    Spice mixtures for marinade – it is used mixed with water and oil
    Liquid marinade – the taste of spices are dissolved in oil-water emulsion which gives a simpler usage than in the form of powder.

 

3. FOOD ADDITIVIES

  • Colorants (Carmine, Riboflavin, rum-brown colorant)
  • Preservatives (Sodium-benzoate E 211, Potassium-nitrate E 252)
  • Acidity-regulating additives (Tartaric acid E 334, citric acid E 330; GDL E575)
  • Antioxidants (Ascorbic acid E 300, Sodium-iso-ascorbate E 316)
  • Phosphates (Tetra-sodium-pyrophosphate E 450iii, Potassium-Tripoli phosphate, Sodium- Tripoli phosphate)
  • Sugar (Dextrose, GSN burnt sugar)
  • Salt (nitrated salt, iodised vacuum salt)
  • Aroma (mushroom aroma, fish aroma, meat aroma)
  • Vegetable extracts-oleoresins (Paprika, Black pepper and Capsicum oleoresin)
